Based on years of research and observation we have concluded that over acidification of the body is the underlying cause of all disease. Because many people consume a diet primarily comprised of acid-forming foods, (ie. Sugars, meat, dairy, yeast breads, coffee, alcohol, starches, etc.) rather than whole plant foods, that they are sick and tired.
Taste buds that have been jaded by the toxic effect of sugar, salt, and other artificial flavors may take some time to adjust and appreciate the subtler taste of vegetables. Some individuals opt to add an alkaline food and eliminate an acid food each week until reaching the goal of an alkaline diet.
Transitioning to an alkaline diet requires a shift in one’s attitude about food. It is helpful to explore new tastes and textures while making small changes and improving old habits. The following guidelines help one to understand why these changes are necessary.
End the breakfast food myth. Stop letting the first meal of your day slow you down! Most foods and beverages people choose for the first meal of the day promote high levels of acidity, yeast, and fungi growth in the body. Foods like breakfast cereals, sweet rolls, toast, pancakes, waffles, muffins, oatmeal, maple syrup, honey, coffee, orange juice, etc. contain huge amounts of sugars and simple carbohydrates which over-acidify the blood and tissues. As you over-acidify the blood and tissues, you create a terrain that promotes the growth of bacteria, yeast, and fungus, the great decomposers of cells and tissues in the human body. What a way to start the day!
Traditional high-protein breakfast foods like eggs, sausage, bacon, steak, and omelets also are highly acidifying and compromise the inner terrain. Meats are also high in parasite levels, particularly pork! Therefore, when you make a commitment to balance your eating habits and improve your health, breakfast in particular, takes on a new look. When you start your day, your choices for breakfast would also work well for lunch or even dinner. Any food you choose to start the day with should be good for your body at any time of the day.
For example, try lentil or vegetable soups for breakfast. The Japanese and many other cultures have served soups for breakfast for years rather than the sugary continental American and European foods. A favorite breakfast for many people new to the Alkalarian diet is millet or brown basmati rice with fresh avocado and tomato slices, soaked almonds, sunflower sprouts and flax oil. What a delightful way to start the day! And your pancreas will thank you as it finds it much easier to control blood sugar levels. Add some Super Soy Sprout powder for additional protein. One of my favorite breakfasts is to stir fry every vegetable that I can find in coconut oil. I add a handful of soaked raw almonds and when the veggies are ready I put them on top of a plate of sprouted buckwheat groats. That will fill you up and stick with you and yet you’ll be able to do whatever you desire without feeling bloated.
Go for the greens. Add liberal amounts of dark green and yellow vegetables and grasses from a variety of sources. Fresh vegetables and grasses are an excellent source of the alkaline salts that are anti-yeast, anti-fungal, and anti-mycotoxic. Green foods are some of the lowest calorie, lowest sugar, and most nutrient rich foods on the planet!
Fresh juiced, green vegetables are very cleansing and loaded with fiber. Fruits may be eaten as a snack between meals, especially when the fruit is in season.
Less carbohydrates, more vegetables. Feature in your diet low carbohydrate vegetables, legumes and some grains. Complex carbohydrates are highly acid forming in the body and should not exceed 20% of the diet, so eat them in moderation. Good low carbohydrate vegetables include asparagus, beets, broccoli, brussel sprouts, cabbage, carrots, cauliflower, celery, cucumbers, eggplant, green beans, green peppers, spinach, kale, lettuce (avoid ice berg lettuce), okra, onions, garlic, parsley, radishes, and squash. Red new potatoes are the best choice in the potato family and should be used sparingly. Enjoy eating fresh legumes. Stored beans can become moldy and contain mycotoxins. Starchy grains and legumes may become moldy when stored and contain fungus, so eat them fresh. Eat fresh, preferably sprouted organic grains in moderation. Some of the ancient grains like amaranth, spelt, quinoa, buckwheat and millet are more alkalizing choices. About 80% of all meals should be fresh, raw, alkalizing foods. (If you only start out with 50% you are still doing much better than the average American!)
The hotter and drier the environment, the more alkaline foods should be eaten because these foods have a cooling effect on us and digest quickly. Therefore, person living in a very hot, dry desert climate will do much better on an alkalizing diet of 90% alkaline foods. The colder and wetter climates allow people to use the slower digesting acid forming foods. The sprouted grains used in Essene bread are a good example because they digest slower and heat the body.
Eat lots of sprouts. Some of the best foods to eat are sprouts. Sprouted seeds become more alkaline as they grow. They are live plant foods that are biogenic, which means that they transfer their life energy to us. Sprouts contain every mineral, vitamin and enzyme needed to sustain the body and assist the digestion process. Sprouts can easily be grown in your kitchen during any season, or purchased at the market. Be sure to check the bottom for brown or soggy stems because sprouts should only be eaten when fresh. Rinse them with pure water before eating them and rinse the live growing plants daily with fresh water.
Remember that sprouts will take on what ever you rinse them in because they absorb the qualities and nutrients of the water they are rinsed and soaked in. When you rinse in chlorinated water, they pick up the chlorine. Some commercial sprouts are not raised in the best of conditions, so check out the source or better yet, grow your own!
Increase your alkali-forming foods, eat less acid-forming foods. Good alkai forming foods include fresh sprouts, spinach, kale, swish chard, avacados, lemons, limes, cucumbers, celery, cauliflower, Brussel sprouts, asparagus, green beans, eggplant, broccoli, fresh tomatoes, zucchini, green/red/yellow peppers, onions, okra, garlic, parsley, watercress, cabbage, squashes, soy beans (tofu), garbanzo beans, raw almonds, Brazil nuts, hazel nuts, sesame seeds, flax seed, sprouted grains and legumes. Green juices from all green vegetables and their tops are highly alkaline, as are vegetable broths (make sure they are yeast free and preservative free).
Acid forming foods you should avoid are all animal products, which include meat and dairy products, refined grains and yeast products, and eggs. All packaged foods tend to be more acid forming.
Feature proteins such as broccoli, spinach, sprouts, garbanzo beans, tofu, buckwheat and nuts.
What about protein? Animal protein foods provide more protein than required by the human body. Our bodies are only 7% protein. In contrast to cow’s milk, which is protein rich at 37%, mother’s milk is only 5% protein. Just consider the difference in the growth rate of a baby calf verses a baby human and you’ll quickly understand why they are so different. Excessive proteins often contribute to health challenges because they produce excessive acid wastes and often contain excessive amounts of saturated fats as well.
Drink plenty of alkaline water. Ideally one will drink ½ ounce of water per pound of body weight per day of good, structured water. Remember that the earth is 70% water, the body is 70% water, a cell is 70% water and DNA is 70% water! For more good information on water go to www.alkalizingwater.com
Is this just a coincidence? There is a direct connection between the quality and content of the water in our body and how the body responds to disease and ageing. The brain is 83% water, the kidneys are 82% water, the lung is 80% water, the heart 79% water, the bones 22% water and the blood 90% water! Researchers share that the body at death has only a 50% hydration level so let’s increase our water levels and live longer and healthier!
Eliminate bakers or brewers yeast and all yeast-containing foods. You should especially avoid baked goods such as bread, muffins, pies, cakes and pastries. In America, one out of nine women will develop breast cancer. The Japanese have a much lower rate of this form of cancer—and research links it with the ingestion of baked goods with bakers or brewers yeast. Researchers also clearly link diets containing these foods with gall stones, kidney stones and arthritis. Bread containing white yeast has also been linked to colon toxicity, slowing down the elimination process. Are you constipated? If so get the white, dead yeast bread out of your diet!
Eliminate milk, ice cream, and especially cheese. These should not be eaten because of their lactose (milk sugar) content, high protein content, and the presence of yeast and fungus, molds and mycotoxins. There are approximately 12 grams of lactose in every 8 ounces of milk that can break down into sugars that can feed yeast and fungus. Because of the high sugar and fat content of dairy products, the fact that dairy cows are stored grains and fungal-based antibiotics, and the fermentation process of cheese and yogurt, all dairy products should be eventually eliminated from the diet. Some alternatives are soy, almond or rice milk, spinach, collards, broccoli, okra, salmon and tofu.
What about calcium? If milk products are eliminated, where should one turn for their calcium needs? Many worry that eating an alkaline diet would seriously deplete one’s calcium intake, which is vital for so many functions of the body. All leafy, green vegetables and grasses are inherently high in calcium. We also need to understand that calcium can be pulled from the bones to help neutralize an over-acid condition which is caused when animal products are eaten; thus we see that people are suffering from a calcium-robbing problem rather than a calcium deficiency problem. As long as we are eating an alkalizing diet that is rich in green foods and green drinks, we don’t need to worry about getting enough calcium.
Avoid alcoholic beverages. Wines of all kinds, beers, whiskey, brandy, gin, rum and vodka are purely mycotoxic. Alcohol is a fungus-produced mycotoxin made by yeast which causes direct injury to human health. Avoid smoking or chewing tobacco.
Remember, eat foods that are whole and as fresh as you can. If you eat something that does nto fall in this category these foods should not make up more than 30% of the food (by volume) on your plate. When 70 to 80% of the food on your plate is healthy alkalizing whole foods you’ll experience many rewards in your health and energy levels.
